We are pleased to welcome Dr. Zijian Zhi to the AI-Meat Lab at Huazhong Agricultural University (HZAU) as an Assistant Professor.
Dr. Zhi received his Ph.D. in Food Science and Nutrition from Ghent University, Belgium, in January 2024. Before joining the AI-Meat Lab, he worked at the College of Food Science and Technology at HZAU. His previous research focused on the structural design and stabilization of complex emulsions, particularly oil-in-water-in-oil (O/W/O) double emulsions, as well as the molecular modification of animal-derived by-products.
Dr. Zhi has published more than 10 first- or corresponding-author research papers in international journals, including Food Chemistry, Food Hydrocolloids, and Journal of Food Engineering, with over 1,500 citations on Google Scholar. He is also a recipient of the Chinese Government Award for Outstanding Self-Financed Students Abroad.
At AI-Meat Lab, Dr. Zhi will focus on developing innovative meat preservation technologies, particularly the preparation and application of bioactive compounds, such as natural antioxidants, to improve meat quality and extend shelf life.
