Representing AI-Meat Lab, Prof. Santos-Júnior showcased the team’s research achievements in food loss reduction, meat and aquatic product preservation, and the integration of artificial intelligence with food science. These research efforts address important global challenges, including food quality deterioration, post-harvest losses, and the need for more efficient and sustainable food preservation solutions.

At AI-Meat Lab, researchers integrate artificial intelligence, machine learning, food chemistry, and microbiology to investigate the mechanisms underlying food quality deterioration, discover and design bioactive compounds, and develop innovative preservation technologies. By combining fundamental research with practical applications, the team aims to extend food shelf life, reduce waste, and contribute to safer and more sustainable food systems.

Participation in this international exhibition provided a valuable opportunity to showcase the team’s research capabilities, exchange ideas with international stakeholders, and explore potential avenues for future collaboration. It also strengthened AI-Meat Lab’s engagement with global efforts to advance food security, reduce food loss, and promote sustainable agrifood systems.

Through continued international engagement and interdisciplinary innovation, AI-Meat Lab will work toward translating advances in artificial intelligence and food science into practical solutions that improve food quality and safety while reducing food waste worldwide.
