To enhance international learning opportunities and broaden students’ academic perspectives, the AI-Meat Lab at Huazhong Agricultural University (HZAU) invited Prof. Rodrigo Tarté, Associate Professor at Iowa State University, USA, to deliver an online course titled Principles of Meat Processing.
The 16-hour course brought together 42 second-year undergraduate students from three programs at HZAU’s College of Food Science and Technology: Food Science and Engineering, Food Quality and Safety, and Food Nutrition and Health. Delivered in English through live online lectures and interactive discussions, the course provided students with a valuable opportunity to learn directly from an international expert in meat science.
Prof. Tarté brings extensive expertise in meat processing, product formulation, non-meat ingredients, and food safety, including nearly two decades of research and development experience in the food industry. The course covered fundamental principles and industrial applications of meat processing, including raw material characteristics, analytical methods, meat protein and lipid chemistry, functional ingredients, processing technologies, preservation, and food safety. The course received highly positive feedback from participating students, who particularly appreciated its systematic content, practical industry insights, and international teaching approach. The English-language instruction also helped students become familiar with professional terminology in meat science while gaining new perspectives on global food processing technologies and industry practices.
This initiative reflects AI-Meat Lab’s commitment to integrating international collaboration into undergraduate education. The team will continue to engage international experts in teaching and academic exchanges, creating more opportunities for students to explore cutting-edge research, understand industrial innovations, and develop global perspectives.
